225g Plain Flour
1 tsp Baking Soda
1 tsp Mixed Spice/Pumpkin Spice
1 tsp Cinnamon
Pinch of Salt
175g Sugar
100g Suet/shortening
100g Sultanas
75g Currants
75g Raisins
1 Grated Apple
150 ml Buttermilk
1 egg
1 tbsp Black treacle/molasses
Dip muslin in boiling water and squeeze out. Flour liberally. Tie string tightly and add a plate to the bottom of a large pan. Add boiling water up to nearly the top of the cake. Simmer for 3 hours. Take out of cloth and leave the skin to dry somewhere warm.
Soak 5 figs in a cup of hot ginger tea
150g rolled oats
Handful of cashew nuts
70g plain flour
175g butter
2 tbsp syrup or honey
grate a chunk of fresh ginger
2 apples
1 nectarine or orange
50g sugar
BAKE 175c FAN/350f
30/35 minutes until golden brown
150g Butter
45g Caster Sugar

1 tbsp Ground Almonds
Lemon Zest
Let it chill for 30 mins
160c fan/320f for 15 mins
100g Pitted Dates
100ml Hot Black Tea
1/2 tsp Baking Soda
Soak for 15 mins and then fork the dates into the tea
40g Butter
1 tbsp Black Treacle/Molasses
25g Muscovado Sugar
1 Egg
75g Plain Flour
1 tsp Baking Powder
160c fan/320f for 25 mins
For the sauce
75g Butter
150g Muscovado Sufar
1/2 tbsp Black Treacle
100ml Cream
100g Rolled oats turned to rough oat flour
30g Pinhead/Steelcut Oats turned to rough oat flour
1/4 tsp Salt
2 tbsp melted butter
1/4 cup hot water
170c fan/340f
20 mins
Grate a grapefruit
Squeeze out the juice
Double shot of Gin
Half cup of hot fruit tea (blackcurrant is perfect)
125g Raw Beetroot
2 Egg Yolks
75g Ground Almonds
1/2 tsp Baking Powder
1/2 tbsp Cocoa Powder
75g Sugar
150g Melted Dark Chocolate
2 Egg Whites
160c fan/320f
